Not all water use in a kitchen needs the same treatment

A restaurant, catering facility or institutional kitchen uses water across several distinct purposes — direct drinking-water service to customers, cooking and food preparation (which becomes part of the food itself), ice production, dishwashing, and general cleaning — and these do not all necessarily require the same level of treatment, even though it can be simpler operationally to treat everything to the same high standard. Water that directly becomes part of served food or drink (cooking water, ice, direct-service drinking water) generally warrants the highest treatment priority, since contamination there directly reaches the customer.

Ice deserves specific attention, not an afterthought

Ice is easy to overlook as "just frozen water" but is a well-documented food-safety risk point in commercial kitchens if produced from untreated or inadequately treated water, or if the ice machine itself is not maintained hygienically — freezing does not eliminate microbiological contamination, and ice is often consumed directly in drinks without any further treatment step. Ice machines should be fed from adequately treated water (matching or exceeding the standard applied to direct drinking-water service) and should be included in the kitchen's routine hygiene maintenance schedule, not treated as a fixture that only needs occasional attention.

Dishwashing water quality affects more than you might assume

While dishwashing water does not need to meet drinking-water standards in the same direct sense, water hardness and iron content specifically affect dishwashing outcomes — hard water can leave mineral deposits and affect detergent performance, while iron can cause staining on dishware and equipment over time. Commercial dishwashing equipment manufacturers often specify a maximum acceptable hardness for reliable equipment operation, and exceeding this can both affect wash quality and shorten equipment life through scale buildup, which is a genuine operating-cost consideration alongside the more obvious food-safety questions.

Scale considerations for kitchen equipment generally

Beyond dishwashers, commercial kitchen equipment relying on heated water or steam — combi ovens, steamers, coffee/beverage equipment, boilers used for hot-water service — is generally sensitive to scale buildup from hard, mineral-rich feed water, which reduces heating efficiency, increases energy consumption, and can lead to premature equipment failure or costly descaling maintenance. Water softening or targeted scale-inhibition treatment, sized for the specific equipment's feed-water requirements, is a common and often underappreciated addition to commercial kitchen water planning that pays for itself through reduced equipment maintenance and energy costs over time.

A practical approach to specifying kitchen water treatment

Rather than defaulting to either "treat nothing beyond basic filtration" or "run everything through a single maximum-treatment system regardless of use," a more cost-effective approach generally starts by mapping out the kitchen's actual water-use points and what each genuinely requires — direct-service and ice-making points warranting the highest priority, equipment-protection needs (softening/scale control) addressed separately where relevant, and general cleaning/dishwashing water assessed against equipment manufacturer specifications rather than an assumed universal standard. This use-specific approach, informed by an actual test of the kitchen's source water, tends to produce a more appropriately targeted (and often more cost-effective) system design than a one-size-fits-all default.
